This year’s show was hosted at the Anaheim Convention Center in sunny California, and ACP featured a new booth design with a private demo room. Many registered guests stopped by to see a variety of ovens on display, from the RMS to the MXP and everything in between.

ACP Corporate Chef Sandy Gibilisco prepared a variety of menu items during the private demonstrations; including chicken wings in the MXP22, pizza in the JET19 and broccoli in the MSO35.

National Nutrition Month

The Academy of Nutrition and Dietetics recognizes the month of March as National Nutrition Month. This 31 day campaign promotes the importance of acknowledging what (and how much) goes into your belly during all days of the year. The organization takes this lively dietary concept and pairs it with suggested physical activity plans. All this leads to an ultimate goal of reducing the risk of chronic disease by improving overall health.

While more people jump on the nutritional bandwagon beyond the month of March, this is a crucial time for restaurateurs to appeal to those looking for a lighter or leaner menu item; such as vegetables, whole grains, fish, etc.

The MXP22 prepares beautifully roasted vegetables in just 40 seconds:
Ingredients:
1.5 oz. yellow squash, cut 5″ thick
1.5 oz. zucchini, cut 5″ thick
1 oz. asparagus
2 Tbsp. olive oil
0.2 oz. shiitake mushrooms
0.8 oz. green beans
salt and pepper to taste

Procedure:
1. Combine all vegetables in a ceramic dish
2. Season vegetables with oil, salt and pepper
3. Place in MXP22 at the following settings:

Stage 1
Time: 0:40    Microwave Power: 50%    Fan Speed: 80%    Radiant Power: 100%

For a main dish, the MSO35 steams cod filets to perfection in 6 minutes:
Ingredients:
8 cod filets, 3-4 oz. each
Poaching liquid (1:1 ratio of white wine and water)
Old Bay Seasoning

Procedures:
1. Fill pan with enough poaching liquid to touch underside of steaming rack
2. Sparingly sprinkle Old Bay seasoning on top of each filet
3. Cover pan and place in the oven at the following settings:

Stage 1:
Time: 2:00    Microwave Power: 100%
Stage 2:
Time: 4:00    Microwave Power: 40%

4. Let pan sit for one minute to allow the filets to carefully finish cooking
5. Check internal temperature (at least 145 degrees F), fish should flake easily with a fork
