C-Stores Aim to Enhance Food Quality

The idea of receiving a fresh, made-to-order food item immediately following a visit to the gas pump has never been a leading concept in the foodservice industry – until now. C-stores are deliberately increasing food quality with hopes that customers will be drawn inside the store for meals, rather than visiting a fast food or quick-service restaurant.

QSR Magazine says that customizable food items with fresh ingredients are beginning to replace the typical roller hot dogs and reheated pizza found in c-stores. ACP high speed combination ovens provide the perfect solution to ensuring that such items are ready and available to c-store consumers. For example, a six inch toasted italian sub features a variety of fresh ingredients and can be made-to-order very easily when heated in the MXP or JET.

6″ Italian Sub:
Start Food Temperature: 35-40°F
Accessory: Pizza screen

Ingredients:
1-6″ filone roll
2 slices of capoccola
2 slices of salami
1 slice of prosciutto
1 slice of provolone cheese halved
¼ cup sauteed onions
¼ cup peppers
¼ cup mushrooms

Put ingredients on bread halves and place the open face sandwich in the oven on the pizza screen accessory, ingredients on heel side. Heat at the following settings according to oven:

MXP22:
Oven Temp: 520°F (271°C)
Stage: 1
Time: 0:30
Microwave: 80%
Fan: 100%
IR: 90%

JET19:
Oven Temp: 475°F (250°C)
Stage: 1
Time: 1:30
MW: 50%

JET14:
Oven Temp: 475°F (250°C)
Stage: 1
Time: 1:10
MW: 60%

A recent study shows that one-third of restaurant visits include children, and they control which restaurant the family goes to 26% of the time. With that said, charming those little appetites is crucial for an operation. However, the National Restaurant Association predicts that upcoming young consumers will expect something other than a burger and fries. Menus will need to extend beyond that by exploring new flavors and utilizing fresh ingredients.

The Nation’s Restaurant News says one of the top five growing trends on children’s menus are oven-baked items, which helps in maintaining healthful levels of fat and sodium content. As for sides, restaurants are beginning to pair main entrees with fresh fruit – a versatile option that is low in labor costs and simple to prepare.

Mini Meatball Subs

Ingredients:

2 lb. 1″ thawed meatballs in marinara sauce, heated in HDC21 for 2:00 @ 100% MW
6 oz. marinara sauce
1 slice mozzarella cheese
Small, oblong dinner rolls

Procedures:

1. Slice oblong dinner rolls in half, leaving one side hinged
2. Scrape out a small scoop in bottom half of bread, creating a resting place for meatballs
3. Place 2 hot meatballs on bottom half
4. Spread 1 Tbsp. hot marinara over meatballs
5. Place slice of cheese over bread and meatballs
6. Place in JET or MXP at the following settings:

JET14: 0:45 @ 30% MW
JET19: 0:40 @ 20% MW
MXP22: 0:30 @ 10% MW  0% AIR  100% IR

Mini Chicken Parm Subs

Ingredients:

1 lb. frozen cooked chicken tenders re-thermed in HSCO 165 F
6 oz. marinara sauce
1 slice mozzarella cheese
Small, oblong dinner rolls

Procedures:

1. Place hot chicken tender strip on bottom half of roll
2. Spread 1 Tbsp. hot marinara over chicken tender
3. Place slice of cheese over bread and chicken
4. Place in JET or MXP at the following settings:

JET14: 0:45 @ 30%
JET19: 0:40 @ 20%
MXP22: 0:30 @ 10% MW  0% AIR  100% IR
