How to Simplify Steaming in the AMSO and MSO Oven

9 Tips to Simplify Steaming and Enhance the Quality of Food Items:

  1. A good rule of thumb to follow is…

    This will bring most foods from refrigerated temperature to a minimum 140°F (60°C)

  1. The AMSO and MSO Steamer Ovens can accommodate two full size, 4″ (10cm) deep, high heat amber pans with lids. ACP recommends the use of high heat Carlisle pans and lids to achieve the best cooking results. Heating or cooking in covered high heat containers ensures:
    • Faster cook times
    • Retention of steam
    • Even cooking results
    • Prevention of food splatters
  2. When possible, defrost and rinse frozen food items before steaming to shorten cook times
  3. Refrigerated items stored at 40°F (4°C) should be covered while heated
    • Exception: Breads, pastries or items with breaded coating should be heated uncovered to avoid softening
  1. Room temperature items require less time to heat than refrigerated items
  2. Internal food temperatures continue to slightly rise after a steaming cycle due to the presence of steam
  3. Food items that are high in fat, sugar, salt, or moisture attract microwave energy and require shorter cook times
  4. Food items that are high in protein or fiber absorb microwave energy slowly and require longer cook times
  5. As a food item’s mass increases, the necessary cook time increases
    • When heating two full pans of thick, dense food items (lasagna, casserole, etc.), it may be necessary to rotate the pans half-way through the steaming process

Penne Vegetable Medley

Welcome to the first edition of ACP’s Chef’s Corner!

The MXP combines 3,000 watts of infra red energy, 2,200 watts of microwave and 2,000 watts of convection energy to give you amazing results in a fraction of the time.  This combination of energy delivers more orders in less time for greater return on investment. It is equipped with a catalytic converter which oxidizes smoke and odors from the oven cavity and the room, eliminating the need for a vent hood.

Our first recipe is a quick, light dish. The Penne Vegetable Medley has a mild flavor profile.   We recommend serving this as a hot menu item, but it can also be served cold without losing any of the interesting and pleasing flavor profile.  If your customers like meat with their pasta, personalize it by adding chicken, beef strips or any number of other options.   This recipe is great for providing a healthier menu option at restaurants or cafes.

Ingredients:

4 lbs (2 kg) Penne Pasta (cooked)
2 lbs (1 kg) mixed Vegetable Blend
14 oz (397 g) can Artichoke Hearts (drained and quartered)
5 oz (142 g) Parmesan Cheese
4 oz (113 g) Extra Virgin Olive Oil
1 Tbsp (9 g) Kosher Salt
1 Tbsp (6 g) Ground Black Pepper

Combine all of the ingredients together in a large bowl or other vessel.   Portion out into 10 oz (284 g) of penne mixture into ceramic bowls or other heat resistant vessels.

Place in the MXP at 520°F (270°C) for 50 seconds at 100% microwave, 50% fan, 100% infra red energy.

Nutritional Information: Calories 380, Protein 13 g, Carbohydrates 49 g, Fat 14 g

Yields: 12 servings

Conventional cooking time: 20 – 40 minutes. The MXP cooks this recipe 36 times faster than using a stovetop to prepare this dish!

Chef Tip:  Instead of cooking the penne on the stove try cooking it in the microwave.    Measure out 2 lbs of penne pasta and 3 quarts of tap water and place in a 4” ½ size
